Paranubes is produced in a small family distillery in the state of Oaxaca in southern Mexico , this agricultural rum comes from an organic cane grown on the 14 hectare estate.
The juice of the cane freshly cut by hand ferments for 48 hours in 2 vats of 1100 liters made of pine. The tank is never completely emptied once the cane wine has been fermented: only half is distilled while the other is left in the tank which is refilled with fresh cane juice , and these are the yeasts. natural ones that get the job done without the need to add more. When a new fermentation cycle begins, two handfuls of boiled mezquite bark (or prosopis , a tree known for its healing properties found in arid areas of Mexico) kickstart the fermentation process.
The distillation takes place in a copper column . The heads and tails are not removed (taking into account the absence of methanol).
No reduction is made: Master Distiller Jose Luis Carrera assembles the heart, heads and tails of the distillate so as to obtain the desired 54%. A maximum of 85 liters of this rum can be produced per day.
