Watershed Uncut Unfiltered Bourbon

Watershed Distillery’s story is one of perseverance, community, and passion. Founded in 2010 by Greg Lehman and Dave Rigo in Columbus, Ohio, it was inspired by Greg’s time in Switzerland, where he admired the local drinking culture. With no prior experience, they navigated legal hurdles, learned the trade at Koval Distillery, and relied on hustle and local support to bring their vision to life.

In 2023, Watershed entered a new chapter with its acquisition by Marussia Beverages USA, whose portfolio includes familiar names like Torabhaig Distillery and Mossburn from Scotland, as well as Hatozaki whiskies from Japan. This move has fueled significant growth, including expanded production capabilities, advanced distillation equipment, and the creation of 35 new jobs in Columbus, now serving as Marussia’s U.S. headquarters. Despite these changes, Watershed remains dedicated to quality and innovation, producing its renowned bourbon and gin while exploring new offerings to delight enthusiasts.

We are thrilled to announce the release of batch 002 of Uncut Unfiltered Bourbon. This rare bourbon spends over four years in barrels until it is ready to be bottled without added water or filtration. Uncork each bottle to find exactly what was in the barrel—bourbon that is untouched, unbothered, uncut, and unfiltered.

Awarded a gold medal at the Fall 2023 John Barleycorn Awards, Watershed’s Uncut Unfiltered Bourbon is aged in a unique selection of char-5 barrels made at an Ohio cooperage. Traditional whiskey barrels are char-4 meaning the barrels that hold this special whiskey sit atop the flame a little longer and impart the incendiary and award winning flavors and aromas of Watershed’s Uncut Unfiltered. Creating whiskey means mastering the elements within your control and accepting that the barrel always has the final say.

On the nose of this unique bourbon find aromas of split vanilla bean, toasted oak, clove and allspice. The vanilla and toasted oak also come through on the palette along with notes of both apricot and walnut with a lingering finish of warm spice and herbal tea.
