Privateer Rum Distiller’s Drawer
When founder Andrew Cabot traveled throughout the Caribbean to research what would become Privateer Rum, he met with a distiller who kept a special bottle tucked away in his desk drawer. It was the distiller’s favorite creation, set aside to showcase how remarkable his spirits could be. This encounter was the inspiration behind our Distiller’s Drawer line. Comprised of rare and standout expressions that are amongst the team’s favorites, they are both a glimpse inside our present-day production and a first look into the future of Privateer Rum.
Distiller’s Drawer #132:
Convergence Barrel: P346
Matured in: Used Whiskey Cask
Age: 7 Years
Fermentation Source: Cane
Distillation Method: Pot and Column
Proof: 119.2
Bottles: 146
It was June of 2016 and Privateer was having trouble sourcing new American oak barrels. We were able to source a handful of high-quality,
freshly dumped Bourbon barrels in their place. Some of these, including P346, have since become notable representations of how our rums are positively influenced by extended age in whiskey casks. Convergence is a Queen’s Share distillate that’s particularly floral on the nose. Aromas of lavender and elderflower intermingle with notes of butterscotch and toffee. On the palate, a marriage of dried fruit including prune, cherry, and apricot are introduced. It finishes soft and supple with notes of jasmine, apple, and pear.
