When founder Andrew Cabot traveled throughout the Caribbean to research what would become Privateer Rum, he met with a distiller who kept a special bottle tucked away in his desk drawer. It was the distiller’s favorite creation, set aside to showcase how remarkable his spirits could be. This encounter was the inspiration behind our Distiller’s Drawer line. Comprised of rare and standout expressions that are amongst the team’s favorites, they are both a glimpse inside our present-day production and a first look into the future of Privateer Rum.

P97 is a Queen’s Share distillate which is made by redistilling the “seconds”, the transitional blend of rich hearts and bitter tails that
follow the tails cut, to extract the remaining hearts. It makes for a luscious and flavorful rum. Echelon is a particularly rich and opulent spirit that continues to evolve in the glass. Lavender, honey, and elderflower intermingle with apple, peach, and apricot. Notes of nutmeg, clove, star anise, and cinnamon
balance the floral and fruity aromas. It’s at once sweet and savory, with vanilla and caramel showing alongside earth and spice.
