APEX Terroir: Exploring the Influence of Place
Inspired by the late Dr. Jim Swan, M&H Distillery’s APEX Terroir series investigates how geography and climate influence whisky maturation. Four locations across Israel were selected for their contrasting temperature ranges, humidity levels, and elevations.
By maturing whisky in the Dead Sea, Jerusalem Mountains, Negev Desert, and Sea of Galilee, M&H explores the contribution of the maturation environment to the final spirit’s character.
Jerusalem Mountains: Cooler, Slower Maturation
At 546 meters above sea level, the pine-covered Jerusalem Mountains offer a dramatically different maturation environment from the heat of Tel Aviv or the Dead Sea.
Temperatures range from 6°C to 29°C (42.8–84.2°F), while relative humidity reaches 55–90%. These comparatively cool, humid conditions produce a more restrained maturation environment.
The reported annual angel’s share is approximately 7%, the lowest of the four APEX Terroir locations. This compares with 25% at the Dead Sea, 15% in the Negev Desert, and 16% at the Sea of Galilee.
Cooler temperatures generally moderate the rate of certain oak extraction and maturation reactions. Higher humidity can also change the relative evaporation of water and alcohol, although the precise effect depends on the cask and storage conditions.
M&H describes the resulting whisky as particularly fresh and delicate, with green fruit, pine-like herbal notes, and restrained oak influence.

Why This Expression Matters
The Jerusalem Mountains expression is the cool-climate counterpoint to the Dead Sea. Its significantly lower evaporation rate and fresher flavor profile illustrate how a less aggressive maturation environment can produce a distinctly different style of whisky.
For whisky enthusiasts, this may be the most revealing side-by-side comparison in the entire collection: Dead Sea versus Jerusalem Mountains, with an 18-percentage-point difference in reported annual angel’s share.
