This whiskey is the result of trial, error, and breakthroughs that began with “What if?”

Crafted by the next generation of whiskey makers, METHOD AND MADNESS Rye & Malt is distillate-driven, combining rye and malted barley to create a vibrant spectrum of flavours. Expect lemon balm, white pepper, chili flakes, toasted wood, honeyed cereal sweetness, and a lingering finish of spiced fruit with subtle citrus zest.

Hand-crafted under Distiller Katherine Condon, the team perfected a mash bill of 60% rye and 40% malted barley, exploring manual distillation techniques to achieve a crisp, spicy character.

The journey began six years ago when the Micro Distillery opened to support the resurgence of Irish whiskey, drawing on wood research, historic mash bills, and the craftspeople’s curiosity. The team double-distilled the mash and matured it in ex-bourbon American oak barrels, balancing tradition with bold experimentation.
