Kilchoman Single Cask Release – ImpEx Cask Evolution – 01/2024 – 15 Year Old Oloroso Sherry Cask 2008/635 (51.8% ABV)

This 15-year-old Single Cask, bottled exclusively for ImpEx Beverages, was matured in an Oloroso Sherry Butt for 12 years before a second maturation in an Oloroso Hogshead for a further 3 years.

The result is a marriage of rich Sherry notes, rounded peat smoke, and layered fruit.

Nose: Stewed dark fruits, sweet spices, and fresh pastry; with gentle waves of peat smoke.

Palate: Smoldering peat smoke, nutmeg, dark honey, and tropical fruit.

Finish: Meaty; with dusty sweetness and tobacco.

Kilchoman Distillery was founded in 2005 and is the first distillery to be built on Islay for over 120 years. It is a farm distillery and a proportion of the barley used in production is grown and malted at the distillery. Kilchoman displays all that is great about the grass-roots traditions of Scotch whisky distilling. As well as being one of only a handful of distilleries still practicing floor malting, barley is also grown on the farm, making Kilchoman the only distillery to complete all parts of the whisky making process on site.
