Part of Holyrood Distillery’s experimental Noir Trilogie, Premier Cru explores the interaction between malt, wine yeast and wine-seasoned oak. Fermentation uses Pinnacle M and Maurivin yeasts, followed by maturation in a combination of ex-bourbon/ex-Chardonnay and ex-bourbon/ex-white-wine casks.
The result is a particularly pastry-driven member of the trilogy, combining orchard fruit and confectionery notes with a dry, elegant finish. Bottled at 47.2% ABV, natural color and non-chill filtered.

Distillery Profile – Holyrood
Established in Edinburgh in 2019, Holyrood is a modern urban distillery with an unusually strong focus on creating flavor before the spirit ever reaches the cask. Its team experiments with heritage and specialty malts, different yeast strains and fermentation techniques inspired partly by Edinburgh’s brewing heritage.
