The Burgundy expression of Holyrood’s Noir Trilogie combines Pinnacle M and Maurivin B yeasts with ex-bourbon maturation and Burgundy barriques.
Here the concept moves toward red fruit, malt and pastry. Raspberry jam, pomegranate and blackcurrant meet brandy snap, vanilla and malted biscuit, giving this expression a particularly appealing sweet-and-savory character.
Bottled at 47.4% ABV, natural color and non-chill filtered.

Distillery Profile – Holyrood
Holyrood was established in Edinburgh in 2019 with a deliberately experimental philosophy. Rather than treating the cask as the sole source of flavor, the distillery explores different barley varieties, yeasts and fermentation recipes to build complexity into the spirit from the beginning. Its approach draws on Edinburgh’s historic connections with both brewing and distilling.
