Holyrood Noir – Bordeaux – 47.10% ABV (700 ml)
Product Description
The Bordeaux member of the Noir Trilogie pairs Pinnacle M and BP725 yeasts with ex-bourbon casks and Bordeaux barriques.
This is the berry-driven expression of the trio: strawberries, cherries and blackcurrants lead into richer notes of Scottish tablet, fudge, doughnut and cereal. The wine influence is present, but Holyrood’s fermentation-driven philosophy remains central to the whisky.
Bottled at 47.1% ABV, natural color and non-chill filtered.

Distillery Profile – Holyrood
One of the distilleries helping return whisky production to central Edinburgh, Holyrood opened in 2019. Its whisky-making program places unusual emphasis on fermentation, heritage and specialty malts, and multiple yeast strains. The Noir Trilogie is a particularly clear example of that philosophy, examining how wine yeasts and wine casks can work together to shape flavor.
