Nose: Fragrant cured meats give way to stewed plum and citrus zest . soft festive spices combine with red apple and rich smoke.

Taste: sweet medjool dates infuse with toasted hazel nuts and forest fruit. Demerara sugar comes to the fore alongside subtle black pepper and toasted oak.

Finish: a full and spicy finish with lingering bonfire embers.
