D* Domaine Christian Moreau Chablis 1er Cru Vaillon 2018

Clean, well-rounded, classic Chablis from vines that average 56 years old. The wine is pure and vibrant in flavor showing off citrus and mineral which combine with just a touch of oak on the finish. From seven plots, one third in barrel, with hardly any new wood at all, up to 5 years old. 60% of the overall Guy Moreau blend is aged entirely in stainless steel, with the remaining 40% seeing oak for a total of 6 months. The wine is then blended and aged for additional time in stainless steel prior to bottling. Vinification starts in tank then as fermentation begins a proportion goes to barrel and through malolactic, then blended in late April. Pale primrose colour, tight on the nose, with some lemon fruit and a plummier style. Very fleshy on the palate. Lean and fat at the same time.
