15 years old Canadian whisky, filled in am ex- Blanton Bourbon Cask.
The cask is then drawn down two times. Once on Winter Solstice: December 21st, 2021 after maturing in the cask for 6 weeks half the barrel (~120 bottles) are drawn down. The rest of the whisky matures for another six months. We are able to experiment and evaluate the impact of half full barrel, the much talked about “oxidation” of whisky is evaluated. Also the impact of oak, how does the whisky change with the additional 6 months of secondary maturation.
Both of the whiskies share the same DNA but are quite different.
