When Chef François Massialot first created Crème Brûlée for the Palace of Versailles in the late 1600s — its silken custard crowned with a crackly layer of caramelized sugar — he couldn’t have imagined that his invention would inspire another act of culinary alchemy centuries later. More than 300 years on, the whiskymakers at Compass Box have drawn on that same spirit of creativity to craft Brûlée Royale Blended Malt Scotch Whisky, an opulent blend that celebrates the transformation of natural sugars into liquid decadence.

At its core is single malt aged in custom American white oak barrels, toasted and charred to reveal layers of peach, butterscotch, and spiced molasses. Star turns from Clynelish and Benrinnes bring notes of tarte Tatin, nectarine, custard, burnt toffee, Basque cheesecake, and Danish pastry, while Speyburn and Ardbeg lend accents of crème caramel, brandy snaps, red apple, steamed milk, raspberry, praline, and Speculoos biscuits — together evoking the sensory theatre of a fine dessert.

“Versailles was the epicenter of innovation in art, science, and gastronomy in the 17th century — the ideal source of inspiration,” says Samuel Travers, Compass Box whiskymaker and lead creator of Brûlée Royale. “Through Chef Massialot’s intoxicating creation, we highlight a remarkable parcel from Clynelish Distillery, matured in second-fill custom American oak barrels that bring extravagant sweetness and a delicate hint of scorched sugar.”

Tasting Notes

Nose: Immediate crème brûlée, poached pears, and fresh vanilla pods, unfolding into custard Danish and scorched sugar brittle.
Palate: Rich and creamy with clotted cream, honeyed malt, and broiled peaches, followed by layers of fresh custard and tarte Tatin.
Finish: Gentle panna cotta, silken milk, and nutmeg spice with lingering burnt toffee and banana split.
