CAPE BYRON SINGLE MALT WHISKY

​The nose leads with an interplay of vanilla and ripe fruit teasing with notes of charred oak. On first sip, the fruitiness comes to the fore but it’s not the orchard fruit flavours we often associate with Scottish whiskies. It is brighter, more flavoursome and somewhat closer to our shores. I get hints of tropical fruit, predominantly mango followed by a touch of nuttiness, possibly hazelnut and at the very finish, an ephemeral hint of salinity. The long, smooth and warming finish encourages another sip and by the second and third, I am taken on a flavour journey through the rainforest.

Where the rainforest meets the sea. Our distillery is nestled amongst subtropical rainforest in the Byron Bay Hinterland of the Northern Rivers region, New South Wales. Situated at Australia’s most easterly point, our terroir is uniquely influenced by the Pacific Ocean’s sea breeze from the east and the ancient volcanic Tweed range to our west. Our signature expression single malt whisky is aged in American oak ex-bourbon casks. Co-created by distillers Jim McEwan and Eddie Brook with a shared passion to make a whisky that represents Cape Byron’s natural environment and captures the influence of our rainforest terroir.
