Amanda Russo\, National Sales Manager at CNS Imports\, will guide us through this spirits tasting paired with Japanese and Sichuan Food. \nJapanese whiskies have taken the world by storm and are well established in their own right.  However\, the #1 selling spirit in the world\, Baijiu\, is still a relatively unknown commodity. Baijiu is to China\, what Bourbon is to USA\, Scotch is to Scotland\, and wine is to France. If you have never before tasted Baijiu\, you will be taken aback – it is like nothing you have ever tasted.  It is an unforgettable experience. Baijiu is incredibly complex and nuanced\, and is best enjoyed with food\, preferably authentic Chinese. \nWhat is Baijiu?\nBaijiu is a Chinese distilled alcoholic beverage. It’s one of the most consumed spirits in the world\, particularly in China. Baijiu is typically made from sorghum\, although other grains like rice\, wheat\, barley\, or millet can also be used. The production process involves fermentation of the grains followed by distillation.  There are many different kinds of baijiu\, but the four main types are loosely defined as the rice aroma (a floral\, light flavor)\, light aroma (a sweet\, floral taste)\, sauce aroma (a sharp taste akin to soy sauce)\, and strong aroma (spicy and fruity)\, and within these broad categories there are countless additional variations. \nFun fact: Kweichow Moutai (a Baijiu) has the highest market value for any company in the world that is purely involved in the alcohol industry? Maotai bottles are typically only found at special functions. This is the first official release of RyeLaw in the United States and Ian will have multiple goodies on hand. \nTasting lineup: \n\nRyeLaw Fife Single Grain Scotch Whisky\nRyeLaw Fife Single Grain Scotch WhiskyChar 1\nRyeLaw Fife Single Grain Scotch WhiskyChar 5\nRyeLaw Fife Single Grain Scotch WhiskyHungarian Oak\nRyeLaw Fife Single Grain Scotch WhiskyFrench Oak\n\nAbout RyeLaw:RawLaw is a single distillery Fife Scotch Whisky made from malted rye and barley. It is hammer-milled\, mashed\, outdoor-fermented\, precision distilled and matured at InchDairnie Distillery in Fife. \nRyeLaw is the only whisky in the world made using malted rye and distilled in a Lomond Hill still. \nA Lomond Hill still is a copper pot still with six copper bubble cap plates inside its neck. By using this unique type of still\, the exact optimum flavour level and strength can be achieved without fluctuations – for RyeLaw this is exactly 72% ABV. This technique is called ‘precision distilling’\, where the peak of the flavour is pinpointed and collected for maturation. \nAbout Ian Palmer:InchDairnie Distillery is the brainchild of Ian Palmer who had a vision of building a distillery\, with equipment that breaks the mould\, capable of reaching flavours not normally accessible. Ian designed the distillery together with the construction company Colorado Group and even engineered the Lomond Hill still (used for precision distilling RyeLaw). \nWith over 40 years of experience in the whisky industry Ian has been integral to the process of converting a green field site to a distillery of its time and has been key to the flavour research and development in the different whiskies engineered and distilled at InchDairnie Distillery. Ian Palmer has worked as Operations Manager at Invergordon Distillery and Group Distilling Manager for all the distilleries in Whyte & Mackay\, including Dalmore\, Jura\, Bruichladdich\, Fettercairn and Tamnavulin.
